 the simplest summer dish for dining al fresco, inspired by Jamie Oliver’s stuffed focaccia.

Recipe: 

Focaccia bread (my alternative was a floury loaf with olive oil, garlic and rosemary)

Jar of roasted peppers

Jar of sundried tomatoes

Olives

Fresh mint and basil 

Mix the ingredients in a bowl while the bread warms up in the oven. Ta-da!

I served with mozerella pearls & tomatoes covered in pesto, and a salad with cured ham.
